What to sell what to save?

I'm having a little problem with my items. I don't know if some items are worth something and I'm kind of scared about selling something worth alot.

Could someone give me basic rule or advice on what items are safe to sell to NPC and what I should put to Auction House?

One more thing! How can I get those crafting things like forester or something.
